My chef is insane

That’s not a bad thing.

Past few days have been kinda quiet, partly because we’re still in a dead season, partly because of the snow we got yesterday. All the prep was done, so Brian went into “creative mode.” It started simply enough – yesterday he made peanut butter ice cream with chocolate chips, but today he decided it was too strong in the peanut butter department. I suggested making caramelized bananas, but Brian made a sweet tempura batter with banana liquor, dunked the bananas in it, and then deep fried them. That plus chocolate ganashe made for one hell of a sundae.

Then things got weird.

We happened to have a few boxes of Marshmallow Peeps on hand. Brian was determined to deep fry a peep in tempura. Unfortunately, the batter just would not stick to the peep. A dusting in flour and the batter stuck to one side, but the marshmallow spread out into a puddle, so the end result in no way resembled a peep. It looked more like a blue pancake. Oh, and always remember – hot marshmallow is like molten lava, so don’t just pop one into your mouth if you choose to microwave or deep fry one. (I happened to see someone do this…)

From then on, it was a quest: what else can we deep fry? We tossed some ideas around for appetizers for the summer menu, such as goat cheese and jalepeno poppers, then somehow we got on the “fried dough” kick. So he took bread dough, flattened it out, and stuck it in the fryer. They came out, got dusted with powdered sugar and raspberry sauce, and were served as dessert for staff meal. We also deep fried a meatball, which wasn’t bad actually. 🙂
