In an effort to get me more comfortable with running the kitchen at the Inn, Brian called me today and said I was gonna run everything tonight without any help. Usually when I run the entree part of the line, he’s there to jump in if necessary (and even a few times where it wasn’t.) Today he said he’d be there, but wasn’t even going to get changed. He was the Phantom, there but not there. When I went in, we had 7 on the books. That changed to 8 – one of the first table didn’t show, and then we added 2 more. Talk about dumb luck – I had 8 amuses set up. The night went by without any real problems. Only thing Brian did was poach some pears for the duck, but we ended up not needing it anyway. One less thing to do tomorrow. Rest of the night, he worked on future menus, inventory, and called in the orders for tomorrow. I did all appetizers and dinners for the night. No mistakes, no problems, real smooth night.
The goal is to be able to run the kitchen alone consistently. i have until March 31st to prove myself if I want a shot at working there for the summer.
