I done went and got me a real job

In 2005, I decided to make a carer out of cooking. One of the first places I applied was Stonebridge Country Club in Goffstown, but I had no experience, and coming out of 20 years of working with computers, they didn’t really take me too seriously. Never even got to meet the chef. So last Wednesday, I went back there. Year of school and an internship under my belt, now the owner wanted to have me come in for an interview. Met with Chef Pete, and got hired on the spot. He said he knew within five minutes that he liked me, and he was willing to train me as his sous-chef. Wow. Told me to come in at 6am today to do Easter Brunch. Buffet style for 350 people. Yikes.

Went in today and found out not only was he short staffed, but I was it. He and I ran the entire line. Cranked out food like a couple madmen, and in his words “we destroyed them.” Only one spot during the day where we fell behind, and that’s because the guy doing dishes couldn’t keep up and we ran out of pans. Other than that, we kicked ass (I stopped taking names three hours into it.) 12 and a half hours of food food and more food.

Got home, showered, and collapsed in a chair for a few hours. Got an e-mail later from Chef Pete – called me his “sous cocinero.” I made it. I’m actually someone’s sous-chef. I’m still recovering from it.
