Fried Smelts
You’ll need three bowls for the dipping – the first one will have flour, salt, pepper, and cayenne. The second will have two or three eggs, beaten. The third is panko bread crumbs. Dip each smelt into each bowl, making sure they are well coated, then place in a deep fryer for about 5 minutes or until golden brown. (Panko bread crumbs come out very crunchy.) Remove from fryer and put on a paper towel to drain. Serve with garlic aioli.
Garlic Ailoi (quick and dirty version)
Chop up a few cloves of garlic and some kosher salt in a food processor. Add a couple spoonfuls of mayonnaise and some lemon juice and mix well.
